Patrons Revolt Against PQ Restaurant, Jaleo (480 7th St NW)
There is nothing wrong with world class chefs changing up the recipes of their restaurant menu items. It keeps things fresh and new and keeps us foodies coming back for more. But, sometimes there is a recipe that is so good that it becomes worthy of the term trade secret.
You know, like Heinz Ketchup. Coca-Cola’s Dr. Pepper. McDonald’s french fries. Jaleo’s patatas bravas.
So, when chef José Andrés changed the recipe of that famous patatas bravas dish, the WaPo’s Tom Sietsema reported that even Andrés’ own family complained about the new, inferior recipe.
While the new patatas bravas dish will remain on the menu for now, Andrés foreshadowed that the original patatas bravas would be back on dining tables towards the end of September. Disaster averted.

That’s good, because his new take on them is basically fancy potato chips with some nice sauce on them. It’s hard to get the patatas part of patatas bravas wrong, but he did. Our waiter even warned us against it a few months ago, saying everyone hated the new style.
They’ve changed the apples and manchengo salad twice since I started going. First the apples and cheese were both julienned; then, they thinly sliced apples and shaved a ton of manchengo on top (my favorite iteration) and now it’s sort of a combination of the two. I love that dish, though, no matter how they serve it!
I have boycotted Jaleo since they recently removed their duck confit from the menu. Let me know when it is back on the menu and I’ll make my return. Change the potatoes if you must, but why mess with the best duck confit in DC? For shame, José.
I ate at Jaleo for the first time last week and ordered the patatas bravas. I thought they were really outstanding. Obviously I don’t know what I’m missing!

Ah, reminds me of the days of “new Coke.” Coke Classic never tasted so good as when they brought it back on the market.
